Legal Ice Cream
Josh Fate shared a favorite recipe for those with a sweet tooth who want to enjoy dessert without spiking their glycemic index. This one has been a hit, and several people asked for the full details.
Ingredients
- 2 cups grass-fed organic heavy cream
- 1 cup grass-fed organic half-and-half or whole milk
- 1 cup organic allulose
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt, such as Himalayan pink salt
- Optional: 2 tablespoons organic cacao powder for a chocolate version
How Josh Makes It
Josh blends all ingredients in a Vitamix and whips until the mixture stops expanding, usually about 10 seconds.
Alternative Method
Lightly heat the allulose with 1 cup of the cream in a saucepan, stirring until the allulose dissolves. The cream should still feel cool once fully dissolved. Then add the remaining ingredients and whisk together.
Use a KitchenAid ice cream maker attachment or a traditional rock-salt ice cream maker to freeze. Josh has not tested a coconut milk version yet, but suggests adding a small amount of coconut MCT oil to help create a thicker, more ice-cream-like consistency.
