Are We Accidentally Killing Our Microbes?
A simple chamber conversation about blending fruit into yogurt raised an important question about texture, storage, and preserving live cultures.
Blending may warm the mixture slightly and expose the yogurt to more air. Fresh fruit can also change the moisture, acidity, and sugar balance of the finished mixture. These changes may affect texture, storage life, and microbial activity over time.
Our practical suggestion: Add fruit, nuts, honey, cinnamon, or other toppings immediately before eating, then gently spoon-stir everything together.
- Keep prepared yogurt refrigerated.
- Use clean utensils and storage containers.
- Add fresh toppings close to serving time.
- Discard yogurt that develops an unusual smell, appearance, or texture.
- Follow the storage guidance for the yogurt or starter culture you use.
